Corned Beef Hash

This is one of the recipes we go to when we want a hot, quick, and easy meal. There are only a few ingredients and except for the garnishes, all the prep is done in advance. This recipe serves two.

We keep diced onions in the fridge, so we will grab what we need for this dish and leave the rest for something else. When grocery shopping, we will go to the meat counter and ask for a single slice of corned beef about 1/4 inch thick. It only takes a minute to dice the slice when I get home and I’ll freeze the cubes so the corned beef is ready whenever we need it (Plan-to-Eat reminds me to defrost in the fridge the night before).

We also keep a couple cans of diced potatoes in the pantry so we just need to open a can, rinse it, and add it to the skillet. Finally, we sometimes keep a small bag of frozen, diced butternut squash in the freezer as well.

This is an easy, quick recipe. We only need to open a couple of bags, a can, throw the veggies and meat into a skillet for a few minutes, and add a couple of eggs. The runny yolks create a tasty sauce.

Ingredients

  • 8-12 ounces of diced corned beef
  • 1 fifteen ounce can of diced potatoes, drained and rinsed
  • 16 ounces of frozen, diced butternut squash
  • 1/2 onion, diced
  • salt and pepper to taste
  • 1/2 tsp onion powder
  • 1/2 tsp minced garlic
  • 4 TBS butter
  • 2 eggs
  • shredded cheddar or crumbled cotija for garnish

Instructions

  1. Add 2 TBS of butter to a skillet and allow it to melt over medium high heat
  2. Once melted, add onion and cook until they begin to soften, about 2 minutes
  3. Then add the diced potatoes and butternut squash, cook for about 3 minutes or until the potatoes and squash begin to brown
  4. Add the corned beef and stir to combine
  5. Add salt and pepper, onion powder, and minced garlic then cover
  6. Continue crisping the mix for 3 minutes
  7. Add the remaining 2 TBS of butter, if needed
  8. Create a well in the hash for each egg. Break an egg into each well and cover for 3-4 minutes or unitl the whites are set
  9. Uncover and remove a portion to a plate or bowl. Top with shredded cheddar, crumbled cotija, or other cheese of your choice
